Radish Chicken Soup

Radish Chicken Soup
蘿蔔雞湯
Ingredients
- 2-3 whole aged dried radish
- 1 small free-range chicken (3-5 lbs) or chicken parts
- 5 dried shiitake mushrooms, soaked for 30 minutes, stems removed
- 4-6 cloves garlic
- 3 slices of ginger
- 1 tbsp. rice wine (optional)
- handful of goji berries or red dates (optional)
Instructions
- Option prep step: blanche the chicken in boiling water for a minute or two to remove any gamey flavors. Drain.
- Put all ingredients except the goji berries into a pot, bring to a boil, then simmer for at least 30 minutes or up to two hours. In the last 5 minutes, add goji berries if using. This can also be done in a Tatung electric steamer.
- Strain stock and taste. There's usually enough salt from the radish, but you can salt as desired. Then shred or chop chicken. These can be stored separately for a few days in the fridge for an easy soup later on.
- Assemble a bowl of soup with heated stock, chicken, and a few goji berries, and a mushroom.
