Sun-dried Cabbage Stock

Although it is made from just two ingredients, this broth carries an astounding depth of flavor—mild sweetness and peppery notes from the cabbage, with a piquant zing from the algae salt.
Sun-dried Cabbage Stock

Ingredients
- 1/4 cup sun-dried cabbage
- 1 cup boiling hot water
- Dunaliella algae salt
Instructions
- Steep the cabbage in boiling hot water for five minutes.
- Salt to taste. Drink it straight or use as a base for other soups and stews. You can also optionally dress it with sesame oil and white pepper, with scallions as garnish.
