This dumpling recipe bundle puts a twist on classic pork and chive dumplings. Based on the Taiwanese stir-fry dish Fly’s Head, it gets its punchy, funky flavor from a mix of fermented black beans (the “flies’ heads”), garlic chives, and ground pork. Bonus: garlic chive symbolizes longevity, so eating these dumplings brings double the good fortune, symbolizing both prosperity and long life.
It is part of a series of three Lunar New Year dumpling bundles curated in partnership with The Dumpling Club, an online course by recipe developer CHOOCHOO-ca-CHEW. Because of their resemblance to Chinese ingots, dumplings symbolize prosperity—eat them in abundance to usher in wealth and good fortune for the coming year.

Fermented Black Beans: briny sea salt and red miso, with chocolatey undertones and a soft succulent bite
This is a core component of Mapo Tofu and fly's head (stir-fried chives, ground pork, and fermented black beans). It also shines in cookbook author George Lee's vegan recipe for Black Bean Tofu.

Firewood Soy Sauce: warm and mellow salinity with roasted peanut, katsuobushi, and anisette notes
Use it straight out the bottle, drizzled over steamed fish or mixed into a dressing for wontons and steamed egg.

White Sesame Oil: fragrant, sweet and slightly bitter with notes of toast and caramel
Add a small dash at the end of a stir fry or on your steamed fish or vegetables.
