This dumpling recipe bundle pays homage to mushroom (gu gu 菇菇) chicken soup, a warming elixir that draws deep flavor from dried shiitake and richness from chicken. Balanced with woody camellia oil and sweet goji berries, these dumplings will nourish your soul.

It is part of a series of three Lunar New Year dumpling bundles curated in partnership with The Dumpling Club, an online course by recipe developer CHOOCHOO-ca-CHEW. Because of their resemblance to Chinese ingots, dumplings symbolize prosperity—eat them in abundance to usher in wealth and good fortune for the coming year.

Tasting Notes and Usage

Firewood Soy Sauce: warm and mellow salinity with roasted peanut, katsuobushi, and anisette notes

Use it straight out the bottle, drizzled over steamed fish or mixed into a dressing for wontons and steamed egg.



Camellia Oil: light, sweet and woody with notes of raw hazelnuts and asparagus

Its light delicate flavor and high smoke point makes it ideal for dishes where you may wish to let the other ingredients shine. Use for dressings, stir fries, baking, or basting meats. Can be used to clean and protect the blades of cutting instruments.



Dried Shiitake Mushrooms: deeply earthy and umami with a dense, meaty texture

For the best flavor and texture, soak in cool water for at least six hours and up to twenty-four hours. For an express soak, use warm water and soak for thirty minutes, or until thoroughly softened.

Use whole in braises, soups, and stocks (see our recipe for Shiitake Mushroom Stock 香菇高湯). Or slice and toss into stir fries. Also makes a great addition to congee.



MSG: 100% umami shards

Use sparingly as a flavor enhancer to intensify the savoriness or meatiness of your soups and stews, stir-fries, braises, or anything else you’re looking to zhuzh up. We love it in stir-fried kong xin cai 空心菜, dry noodles, and steamed egg.

Firewood Soy Sauce: water, non-GMO black soybeans, non-GMO yellow soybeans, non-GMO wheat, sea salt, sugar, mirin, licorice, disodium inosinate, disodium guanylate, alanine

Shelf stable for 2 years from printed manufacturing date. Keep refrigerated after opening.



Camellia Oil: 100% camellia seed oil



Dried Shiitake Mushrooms: organic shiitake mushrooms (medium and large sizes)

Seal tightly after use and store in a cool and dry place. For best flavor, consume shortly after opening.



MSG: pure monosodium L-glutamate

Store at room temperature. After opening, keep away from high heat and high humidity.
