Taiwanese BBQ Sauce
This is a simple BBQ sauce recipe with a Taiwanese edge. The shacha sauce is a Taiwanese bbq staple, and lends a savory, briny depth to an otherwise rich and unctuous mix. For even more richness, stir in some raw garlic at the end or incorporate a tbsp of white sesame oil after taking it off the heat.
TAIWANESE BBQ SAUCE

Makes about one cup, depending on final thickness
Prep: 10 minutes
Cook: 15-20 minutes or more as needed for sauce reduction
Ingredients
- 3 cloves garlic, minced
- 2 tbsp Firewood Soy Paste
- 40 g Taiwanese black sugar
- 3 tbsp shacha sauce (we like Bullhead brand)
- 1 tbsp Dong He White Sesame Oil
- 1 pinch five spice powder
- 4 tbsp Vat Bottom Soy Sauce
- 2 tbsp Taiwanese rice wine
- 1 pinch black pepper
- 200 ml water
Equipment
- Saucepan
Instructions
- Mix all ingredients together in a saucepan.
- Bring to a simmer, stirring frequently.
- Keep stirring until the sauce has thickened enough to coat the back of a spoon.
