鐵觀音氣之茶

Tieguanyin Sparkling Tea by S.C Lab

$36.00

We’re proud to present this series of farm-to-bottle sparkling teas from S.C Lab, who crafts tea spirits and beverages that extend Taiwanese tea traditions into new forms. Rooted in a family-owned tea farm in Shuangxi, Taiwan, their series of non-alcoholic, sommelier-grade beverages are a perfect stand-in for a sparkling wine or champagne, but can do double duty as a mixer with your finest spirits.

This caffeinated sparkling tea begins with premium Tieguanyin (aka Iron Goddess of Mercy), hand-harvested in Muzha. S.C Lab blends both dark roast and regular roast, the former for its heavier body and the latter for its subtly floral aroma. The leaves are cold brewed and bottled using an aseptic cold filling technique, which is ideal for locking in the fragrance of the tea without chemical preservatives.

Malic acid from Fuji apples adds bright, clean acidity to the warm aroma of Tieguanyin, creating a balanced profile reminiscent of a crisp autumn day. We like to call it our grown up version of the classic Taiwanese Apple Sidra soda, but it’s closer in character to Iron Goddess of Mercy, with just a kiss of tart apple.

This sparkling tea has been a hit at every party we’ve ever brought it to, often finished well before the wine and the whisky. The bottle is beautiful and the tea is refreshing and complex. Though it is lightly sweetened, the overall flavor profile is dry and crisp. Perfect for special occasions or an extra-luxurious evening at home.

If you're looking for a stronger, more floral flavor, try Guava Oriental Beauty. For a caffeine-free option with delicate honey notes, try Longan Flower and Osmanthus. Or, check out the sampler to try every flavor from the series.

S.C Lab's Philosophy

S.C Lab's sparkling teas are made by cold-steeping tea and botanicals in purified water for up to five days, then blended with other ingredients, like fruit, and lightly carbonated to finish. They source from tea farms throughout Taiwan, including, but not limited to, their own.

Sparkling tea may be an emerging category in the world of fine non-alcoholic beverages, but it has been around in some form or another for ages, from fermented kombuchas to carbonated tea that can be found in convenience stores in Taiwan. S.C Lab states that for them, carbonation alone is not enough to make an interesting drink. Instead, they follow what they call a “five notes” philosophy when building a drink: the aroma, the first sip, how the flavor develops in your mouth, the finish after swallowing, and the aroma left in the glass are all considered. They “want all five stages to connect and create a melody, like a do-re-mi-fa-so in a song.”

Yun Hai is proud to be the exclusive East Coast distributor of this non-alcoholic tea wine from S.C Lab. Restaurants, get in touch!

Tasting Notes and Usage

Dry, and warm with the unmistakable flavor of Iron Goddess of Mercy tea. A clean, bright finish and the most delicate bubbles.

We love it paired with grilled meats and vegetables (we paired it with our BBQ tofu skewers on Cooking With Steam), but it’s a lovely and versatile beverage that will work in any situation.

Ingredients and Instructions

Water, Tieguanyin tea, sugarcane syrup, malic acid, carbon dioxide.
Non-alcoholic.

Store in a cool place. Refrigeration enhances flavor. Avoid high temperatures or direct sunlight.

About S.C Lab

Born amidst the mountains of Taiwan in 2022, Sensitive Creatures Lab (S.C Lab) 仃杉實驗 was founded by fourth-generation tea farmer Mikey and winemaker and bartender Pouria. They pride themselves on sharing the sentimentality of small tea farms with the world through their commitment to quality, sourcing only all-natural organic ingredients for their creations.

The seed for S.C Lab was planted in 2019, when Mikey returned to Taiwan from a tech career in the US and stayed at his family’s tea plantation in Shuangxi. During this time, he learned not only how to farm and make tea from his uncle, but also how to infuse spirits with the tea leaves.

Inspired by this tradition, Mikey envisioned tea wine 茶酒 as a potential Taiwanese icon. He partnered with Pouria, an Iranian-Canadian mixologist and bar owner in Taiwan, and began the journey of developing it. With Pouria’s global bartending experience and sharp sensitivity to herbal and fruity flavors, they introduced innovative distillation techniques, creating complex and multi-layered tea spirit profiles and, later, non-alcoholic sparkling tea and fruit blends.
