Harvesting Ai Yu Jelly 愛玉

Ai Yu Jelly is a natural, plant-based jelly made by rinsing the seeds of the Ai Yu Fig (ficus pumila var. awkeotsang) in mineral water. The natural pectin is released, setting the water into an amber-colored jelly. The fig seeds we offer are harvested in the Alishan Mountain Range near the Zou aboriginal village of Da Bang 達邦.

The figs we source are grown on aboriginal land in the Alishan mountain range. They are harvested by slicing the stems with a hook on a modified fishing rod. The vines in the forest were planted a generation ago and are 30-40 years old.

When the stems are sliced, the Ai Yu figs fall to the forest floor. The harvesters gather them up by hand and pack them into bags to bring back to the village. “You can’t believe the places they’ll hide.”

Depending on weather conditions, the harvesters may need to walk older mountain paths to return to the village. Here, they are crossing the Dabang Suspension Bridge 達邦吊橋 on the Tefuye Trail 特富野步道, the same bridge the farmer used to walk home from school in his youth.

Back at the village, the figs are peeled by hand, sun dried for a few days, turned inside out, and left to dry in the sun again. Once ready, seeds are scraped off and packaged by hand. Our figs have one of the highest pectin counts we’ve ever encountered; a testament to the high quality of this fruit.
