Sized to perfectly fit atop your 6-Cup Tatung Steam Cooker with enough room for the inner pot beneath, these bamboo and cypress wood steamers are meticulously hand crafted by Fushan Steamer 富山蒸籠, a family-owned legend that has been making steamers in Taipei the traditional way since 1949. These are made from materials sourced completely from Taiwan, without any bleaches, adhesives, or chemicals.

For steaming foods, bamboo steamers are superior to stainless steel ones (in our humble opinion). These steamers are made from alternating layers of both bamboo and cypress wood for durability. Bamboo is a tough and durable, yet pliable and breathable material that can hold shape well. Meanwhile, cypress wood absorbs water and expands and contracts with heat. These steamers will wick water away from the steaming surfaces, reducing drip and waterlogged foods. Additionally, they emit a warming, woodsy aroma throughout the kitchen that kisses the food with flavor.

Steam cooking is fundamental part of Chinese gastronomy that carried over to Taiwan with early Chinese migration to the island. Before electrification and the advent of the Tatung steam cooker, the bamboo steamer, set over a wok filled with water, was used for everything from you fan 油飯 (oil rice) to bao zi 包子 (filled steamed buns).

While many continue to use bamboo steamers over woks, many steamer baskets were adapted to fit the Tatung steam cooker as the appliance rose in popularity—a beautiful example of the ingenuity of Taiwanese craft. You can cook rice in your inner pot and the bamboo steamer will sit properly over it. The bamboo and cypress steamer lid can also be used on its own as an alternate moisture-wicking lid to the stainless steel one for the 6-Cup Tatung Steam Cooker.

If you don't have a Tatung cooker, these steamers can be used with a wok or a pot over the stovetop—just make sure the dimensions are compatible. We also recommend using a steamer rack so that the steamer base doesn't come in direct contact with a hot wok.

Configurations

The steamers baskets are available in sets of one or two, with a corresponding lid. For those who want to keep it simple, we also offer a single basket, which can be used with the lid that comes with the Tatung. Every configuration comes with a set of four reusable canvas steaming cloths, to line the baskets with.

About Fushan Steamer

Founded by Xiao Sheng Yu 蕭生育 in 1949, Fushan Steamer 富山蒸籠 in Wanhua, Taipei is a family-owned and operated factory and storefront that has been hand crafting steamer baskets for over 70 years. Having immigrated from Fujian to Taiwan at the age of sixteen, Xiao first learned to make steamer baskets from his father-in-law to make a living in a new land, and has since passed that craftsmanship down to his sons and grandsons.

Fushan Steamer is widely known as a source for high-quality steamer baskets, having fashioned them for hotels, restaurants, and individual customers across Taiwan and abroad—including a gigantic two-meter-wide steamer basket for a banquet restaurant in Taoyuan. Fushan has also demonstrated their expertise by making steamers according to specialized needs, such as a steamer just for mantou 饅頭 (steamed buns), which requires edges tall enough to give the mantou room to grow as they cook.
