Cabbage is one of the most widely consumed vegetables in Taiwan. Find it pickled into a crunchy, tangy pao cai 泡菜; chopped and stuffed into dumplings and bao; stir-fried with aromatic garlic; or simmered in hot pot, soups, and stocks. We also offer dried high mountain cabbage, easily reconstituted for stir-fries or thrown in with rice or soup.

For us, soup season is the entire year, so we've put together a bundle with our favorite dried ingredients for healing, nourishing stocks. Mix and match them in the Tatung Steamer or a pot over the stovetop for a rich and complex stock with deep umami flavor and light sweetness. Drink straight or strain and use as a veggie stock or dashi base. Combine with your bone broth for extra flavor and a punch of color.

Our recommendation for a delicious golden cabbage soup: gather 1 piece of aged daikon, 3/4 cup of high mountain cabbage mix, and two shiitake mushrooms. Make a smiley face out of it, like we did, and add it into a pot with 12 cups of water. Simmer this together for an hour (or steam it in the Tatung for 20-25 minutes). Then, salt to taste with our Dunaliella algae salt, which will add salinity and bright notes.

For extra credit, drizzle with black sesame oil (not included in this bundle) and garnish with chopped scallion.
