Ozzy Hsieh's Green Pepper You Tiao

Ingredients

  • 300 g long green pepper
  • 2 sticks you tiao (Chinese fried dough sticks), chopped into pieces
  • 10-15 cherry tomatoes, halved
  • Peanut Oil, to taste
  • 2 tsp (~15 g) Taiwanese no. 2 sugar
  • 2 tsp (~15 g) ketchup
  • 2 tsp (~15 g) Fermented Black Beans, soaked and rinsed
  • 2 tsp (~15 g) Firewood Soy Paste (or, for a kick, try it with Spicy Soy Paste)

Instructions

  1. In a flat-bottomed pan, fry the peppers in vegetable oil until browned. Set aside.
  2. Finely chop the fermented black beans. Stir-fry them in the same pan used for the peppers. Once they’re aromatic, add the sugar and the soy paste.
  3. Add the halved cherry tomatoes to the pan, then mix in the browned peppers and chopped you tiao.
  4. Add the ketchup and stir-fry everything together until well-combined.
